Biroldo (or also called burristo, pudding or mallegato) is a typical salami from Camaiore and surroundings, highly prized by gourmets.
It is prepared with cooked meats (head, rind, tongue, lung) and pig’s blood. Expertly seasoned with rosemary, garlic, fennel seeds and other spices is stuffed into natural pig intestines according cured meats making. It has a strong taste and a unique flavor.
